Easy Mince Pies Recipe


1 jar of mincemeat
Zest of 1 lemon (optional)

For the pastry
350g plain flour
225g unsalted butter
100g caster sugar
1 large egg beaten

To decorate
Sprinkling of icing sugar


1. Preheat the oven to 200C/gas 6/fan 180C. Line and grease (with a light brush of butter)
2 x 12 hole cupcake tins.

2. To make the pastry, rub the butter and flour into a breadcrumb consistency, then add the
caster sugar. Knead briefly, until the mix turns into a dough. Place in the refrigerator for
half an hour to chill.

3. Once half an hour has past, remove the dough and roll out to about a 1cm thickness. Use a
round cutter, to cut out the mince pies bases and place in the baking trays.

4. Fill each of the pastry bases with a tablespoon of mincemeat and a light sprinkle of lemon
zest for each pie.
5. Now use a star shaped pastry cutter to cut out the mince pie lids and place on top of each of
the pies. Lightly brush the egg over the top of each of the mince pies to glaze. 

6. Bake for 20 minutes until golden and then leave to cool in the tin for 5 minutes, before
removing to a wire rack. Lightly dust with icing sugar to serve.
